INGREDIENTS:
8 corn tortillas
2 large avocados, pitted and peeled
2 tbsp coconut flour
1 egg, whisked
2 tbsp almond milk
2 bags Ranch Tortilla Chips, crushed
2 roma tomatoes
½ red onion
2 tbsp chopped cilantro
Salt and pepper to taste
1 lime
1/2 cup chopped cabbage
1/3 cup enchilada sauce, optional
Start by preheating the oven to 400°F and line a baking sheet with parchment paper or tin foil. Cut each avocado into thin slices, making about 10 slices per avocado. Next, prepare three bowls with coconut flour, egg and almond milk mixture, and crushed chips. Coat each avocado slice with coconut flour, then dip it in the egg mixture, and finally coat it with crushed chips. Place the coated avocado slices on the baking sheet and bake for approximately 8-10 minutes until they turn golden brown. In the meantime, chop the onion, tomato, and cilantro and mix them in a bowl with salt, pepper, and a squeeze of lime to create pico de gallo. Heat your tortillas by wrapping them in a damp paper towel and microwaving them for 15 seconds. Finally, assemble your tacos with 2-3 slices of avocado, pico de gallo, shredded cabbage, and your favorite sauce.
